This is a first and worth its weight in peas. Swiss chef Daniel Humm, whose Eleven Madison Park was named the best restaurant in the world in 2017, decided last summer to offer its guests only a vegetarian menu. Despite this, the Michelin guide awarded it three stars, which was a revolution, especially in a country where meat is sacred. Daniel Humm marks the world of gastronomy even more by taking the first step towards more sustainable food that is less harmful to the planet.
We ate there last May in the special atmosphere of American restaurants where the service is one after the other at all hours. The show is punctuated by a ballet of numerous waiters, the wine list and its 4,700 references often give way to the cocktail menu.
Meals for the poor
In almost Japanese dishes, the plant takes on another dimension, like this exquisitely delicious radish cake, or this home-made tofu delivered in a box with a ceremony that a butler wouldn’t deny a duck. In the kitchen, where the chef is often absent, the large team is young and enthusiastic.
Since the pandemic and the fifteen-month closure, the facility also offers takeaway meals. But above all, the $365 gourmet restaurant menu serves to provide the poor with free meals served in the Eleven Madison Truck that cruises through the city. Such a bold step.
